Jamie's Empire Chicken

I don't know if you've all be watching Jamie's Great Britain, but he had an amazing recipe for a roast chicken and potatoes that they said would be on the website but obviously wasn't so I watched it again and quickly scribbled down the ingredients. I'm certainly going to try it and think you should too.

1 whole chicken to roast
Whole bulb of garlic, grated
thumb sized piece of ginger, grated
1 heaped tbsp of:
grated chilli                                            cook for 1 hour 15 minutes on 200
tomato puree
ground coriander
cumin
tumeric
garam masala
2 good spoonfuls of yogurt
juice of two lemons
season with salt.

mix all together and marinade chicken. score the legs as they take longer to cook and make sure the marinade gets in there. should marinade for half a day ideally.
                                 quick tip! boil a lemon for a couple of minutes, place inside the chicken to help cook.

marinade will burn a bit - it's the yogurt, pick it off after cooking if you don't like it.

Jamie puts his chicken in a roasting tray but on a wire stand, this way the chicken juice drips out and adds to the gravy he also makes consisting of;
1 cinnamon stick
10 cloves
a few shallots                                                   all mixed up!
Worcestershire sauce
vinegar
2 tbsp of plain flor
1/2 pint of chicken stock



To accompany this dish he makes almost-bombay roast potatoes;
2 tbsp olive oil
1 tbsp;
mustard seeds
cumin seeds
garam masala
knob of butter
add potatoes - whatever type you want and how many you want
chopped tomatoes
chilli
garlic
coriander.
